Line the air fryer basket with a sheet of parchment paper.
Brush the parchment lightly with coconut oil.
In a medium mixing bowl, add 250 g of shelled walnuts.
Cover the walnuts with cold water and let them soak for about 15 minutes.
Drain the water from the walnuts and pat them dry with a clean kitchen towel or paper towels.
Transfer the walnuts back into the mixing bowl.
Add 3 tablespoons of honey to the walnuts.
Sprinkle in 1 tablespoon of flax seeds, 1 tablespoon of poppy seeds, and 1 tablespoon of sesame seeds.
Stir the mixture well to combine the walnuts with the honey and seeds.
Spread the walnuts in an even layer in the air fryer basket.
Sprinkle a light pinch of salt over the top of the walnuts.
Set the air fryer to 170° C (340° F) and cook the walnuts for 15 minutes, stirring every 5 minutes.
Check the color and texture of the walnuts as you stir to ensure even roasting.
Once the 15 minutes are up, carefully remove the basket from the air fryer.
Transfer the walnuts onto a sheet of parchment paper to cool completely.
