Prepare the spice mix: Combine 2 teaspoons turmeric, 1 teaspoon ground cumin, 1/2 teaspoon black pepper, and 1 teaspoon ground cardamom in a bowl and mix well.

Heat 1 tablespoon canola oil in a large pot over medium heat.

Chop 2 medium onions and add them to the pot. Sauté until lightly browned.

Chop 1 medium zucchini and 1 carrot, and add them to the pot.

Add 3 cloves of garlic, chopped, to the pot.

Add 4-5 pieces of chicken thighs with skin and 5-6 pieces of chicken wings or bones to the pot.

Add 1 teaspoon salt and the prepared spice mix to the pot.

Pour in 6 cups of boiled water to cover the vegetables and chicken.

Bring the mixture to a boil, then reduce the heat and let it cook for about 1 hour and 15 minutes to 1 hour and a half.

Taste the soup and adjust seasoning if necessary, adding more salt if needed.

Optionally, add 1 more teaspoon of cumin after about an hour of cooking.

If desired, add chopped potatoes, cut in half, during the last part of cooking.
