Start by searing the chicken thighs in a skillet on medium-high heat.

Add a little olive oil to the pan and season the tops of the chicken thighs with salt, black pepper, and onion powder.

Once the pan is hot and smoking, place the chicken in the skillet, seasoning side down.

Sear the chicken until it gets a nice color, about a few minutes on each side, then remove from the skillet.

Spray the inside of a 6-quart crock pot with non-stick cooking spray.
