8 oz bean sprouts

2-3 tbsp vegetables oil
½ tbsp sugar
⅛ tsp salt
1½ tbsp hot water
2 tbsp light soy sauce
1 tbsp vegetarian oyster sauce
1½ tbsp dark soy sauce

Boil 2 quarts (8 cups) of water for cooking the noodles.

Wash and cut the vegetables: rinse and drain bean sprouts, wash and cut Chinese yellow chives into 2” lengths, wash and cut scallions/green onions into 2” lengths, cut yellow onion into long strips.

Remove chow mein noodles from the bag, separate/loosen them before cooking, then add to boiling water and cook for 1 minute. Transfer to a food strainer and set aside.

In a small/medium bowl, mix sugar, salt, and hot water until dissolved, then add light soy sauce, vegetarian oyster sauce, and dark soy sauce, mixing well.

On a large pan/wok over high heat, add vegetable oil and wait until hot. Add onion and the white part of scallions, sauté for 30 seconds until fragrant.

Add noodles, toss and mix with chopsticks and spatula for a minute, then let sit and pan fry for a minute.

Add bean sprouts and the white part of yellow chives, gently toss for another minute.

Add the sauce mixture and continue tossing for 1-2 minutes until the noodles absorb the sauce.

Add the rest of the yellow chives and green part of scallions, cook for another minute, then remove from heat.
