Clean mussels under cold water, removing beards and any debris.
Heat butter in a large pot over medium heat until melted.
Add chopped shallots and minced garlic; sauté until fragrant, about 2-3 minutes.
Pour in white wine and bring to a simmer.
Add mussels and cover the pot; steam until mussels open, about 5-7 minutes.
Stir in chopped parsley and a drizzle of truffle oil before serving.
Cut potatoes into fries and soak in cold water for 30 minutes.
Drain and pat fries dry; heat olive oil in a deep fryer or large pot to 350°F.
Fry potatoes in batches until golden brown, about 4-5 minutes per batch.
Remove fries and drain on paper towels; season with salt and black pepper.
Serve mussels with fries on the side, garnished with lemon wedges and mayonnaise.
