Wash 1/2 kg of chicken thoroughly three times and drain on a paper towel to remove extra moisture.

Take a bowl and add 2 tablespoons of panda and 2 tablespoons of corn flour.

Add 1 tablespoon of chili powder, 1/2 teaspoon of turmeric, 1 egg, 2 teaspoons of ginger-garlic paste, and 1/2 tablespoon of salt.

Add 1/2 tablespoon of chicken masala or biryani masala and the juice of half a lemon.

In a mortar and pestle, take two stems of curry leaves, a few mint leaves, two green chilies, and a few coriander leaves, and grind to make a coarse paste (can also use a mixer grinder).

Add the ground paste to the bowl and mix well.

Coat the chicken pieces with the batter and marinate for a minimum of 2 hours or a maximum of overnight.

Heat oil in a deep frying pan on high flame and drop the marinated chicken pieces, ensuring not to overload the pan.

Reduce the flame to medium hot and fry the chicken evenly on both sides, turning occasionally until golden brown in color.

Drain the fried chicken on paper towels.
