300 gms boneless chicken cut into 1.5 inch tikka pieces
1/4 tsp turmeric powder
1 tsp red chilli powder
1/2 tsp Kashmiri chilli powder
1/4 tsp cumin powder
1/2 tsp garam masala powder
1/2 tsp salt
pinch of salt
1 tsp lemon juice
2 tbsp thick whisked curd
1 tsp ginger garlic paste
1 tbsp oil
1/2 tsp dry roasted & crushed kasuri methi
2 tbsp oil (for cooking)
1 tbsp melted butter for basting
2 tbsp chopped coriander leaves

Cut the boneless thighs and breast fillets into around 1.5 inch tikka pieces.

Dry roast the kasuri methi and crush it with your hand.

Marinate the chicken with turmeric powder, red chilli powder, Kashmiri chilli powder, cumin powder, garam masala powder, salt, lemon juice, thick whisked curd, ginger garlic paste, oil, and crushed kasuri methi. Mix well and set aside to marinate for around an hour.

Fine chop the coriander leaves and cut the lemon/lime into wedges for garnish.

If using wooden skewers, soak them in water for 30 mins before skewering the chicken.

Skewer the marinated chicken pieces onto the wooden skewers, around 5-6 pieces per skewer. Brush with the remaining marinade.

Preheat the grill pan and brush it with oil.

Place the skewers side by side in the pan without crowding.

Grill on medium heat for around 3 minutes, then flip and continue grilling for another 3 minutes.

Baste with melted butter and grill on low-medium heat for around 4-5 minutes until the chicken is tender and browned.

Garnish with chopped coriander leaves and lemon wedges. Serve as a starter.
