This dish showcases the Brazilian love for rich, savory meals and has become popular worldwide, adapting to various cooking methods and tastes.

Cut the bacon into smaller pieces, using 3 slices which weigh 150 g.
Remove the skin from the bacon as it can be tough.
Slice the onion into rounds and then chop them into larger pieces.
Heat a skillet and cook the bacon until it releases its fat, about 10 minutes.
Add the chopped onion to the skillet and sauté for about 5 minutes until it starts to turn yellow.
Add cassava flour gradually, mixing until desired consistency is reached, adjusting for moisture preference.
Season the farofa with salt to taste, using crushed coarse salt.
Prepare the picanha by cutting it into thick slices, about two fingers thick.
Season the picanha with crushed coarse salt on both sides and let it rest for 5 minutes to absorb the flavor.
Preheat the air fryer to 200°C (392°F).
Sear one side of the picanha in the air fryer for 5 minutes to retain juiciness.
Flip the picanha and cook for another 6 minutes at the same temperature.
Place the picanha fat side up for the last minute to crisp the fat.
Remove the picanha from the air fryer and let it rest before slicing.
