4 medium sweet potatoes
1 cup brown sugar
1/2 cup water
1/4 cup cooking oil
1/2 tsp salt
1/2 tsp vanilla extract

Peel the sweet potatoes and cut them into thick slices or wedges.

In a pot, combine the brown sugar, water, and salt. Stir until the sugar dissolves.

Add the sweet potatoes to the pot and bring to a boil over medium heat.

Once boiling, reduce the heat and let it simmer until the sweet potatoes are tender, about 10-15 minutes.

Remove the sweet potatoes from the pot and set aside, reserving the syrup.

In a frying pan, heat the cooking oil over medium heat.

Once the oil is hot, add the sweet potatoes and fry until they are golden brown on all sides.

Pour the reserved syrup over the fried sweet potatoes and let it caramelize for a few minutes.

Remove from heat and drizzle with vanilla extract before serving.
