4 medium sweet potatoes

1/4 cup cooking oil
1/2 tsp salt
1/2 tsp vanilla extract

Peel the sweet potatoes.

Cut both sides of the sweet potatoes vertically to achieve a circle shape.

Heat oil in a frying pan over medium heat.

Fry the sweet potatoes, tossing occasionally for even cooking, until they are golden colored.

Once cooked, set the sweet potatoes aside.

In the same pan, reduce heat to low to medium and add 4 to 5 tablespoons of white sugar.

Stir the sugar until it has melted completely and reached candy temperature.

Coat the fried sweet potatoes with the melted sugar, ensuring they are evenly coated on both sides.

Transfer the coated sweet potatoes onto a plate lined with parchment paper to prevent sticking.
