Cover dried chickpeas with cold water and let them soak for 24 hours.
After soaking, drain the chickpeas very well to remove excess water.
Lay paper towels in a baking dish and blot the chickpeas to remove any remaining moisture.
Drizzle olive oil over the chickpeas (approximately 2 tablespoons) to generously coat them.
Add salt, freshly ground black pepper, ground cumin, chili powder, smoked paprika, and cayenne pepper to the chickpeas.
Mix the chickpeas until they are evenly coated with the oil and spices.
Spread the chickpeas in a single layer in a baking dish.
Transfer the baking dish to a preheated 400°F (200°C) oven for about 45 minutes to 1 hour, stirring every 15-20 minutes to ensure even cooking.
Remove from the oven when the chickpeas are golden brown and crunchy.
Transfer the chickpeas to a cooling rack to allow excess oil to drip off.
Let cool slightly before serving.
