Add 5 peeled and chopped potatoes to a large pot.

Cover potatoes with water and sprinkle in salt.

Turn heat to high and allow potatoes to boil for 20 minutes or until fork tender.

Season both sides of 3 boneless skinless chicken thighs with paprika, Italian seasoning, black pepper, and salt.

Heat 1 tbsp of olive oil over medium-high heat.

Sear chicken thighs for 5 minutes on each side or until golden and cooked through.

Remove chicken thighs from the pan and set aside.

Lower the heat to medium and add in 3 minced garlic cloves and 0.5 cup of chopped sundried tomatoes.

Add a small handful of baby spinach and sauté for about 30 seconds or until spinach wilts.

Add in 4 oz of cream cheese and squeeze in 0.5 cup of sour cream, mixing until smooth.
