Barbados Christmas Pound Cake

Originating from Barbados, this rich and moist cake is a staple during Christmas celebrations, often made weeks in advance to allow the flavors to develop. Traditionally, families prepare it with a variety of dried fruits and spices, symbolizing abundance and joy. Today, it is enjoyed not only in Barbados but also in Caribbean communities worldwide, often shared during festive gatherings and celebrations.

In a bowl, combine 5.5 cups of all-purpose flour, 5 teaspoons of baking powder, 0.5 teaspoon of salt, and the zest of 1 lemon; whisk together.
In a separate bowl, soak 1.5 cups of mixed peel, 1 cup of chopped cherries, and 2/3 cup of dark raisins in 0.5 cup of Barbados rum for 2 days, stirring occasionally.
After soaking, mix the soaked fruit with the rum.
In another bowl, cream 1.5 cups of margarine and 2.5 cups of granulated sugar until soft.
Add 4 eggs one at a time, mixing well after each addition.
Gradually add the milk and flour mixture to the creamed margarine and sugar, mixing on low speed.
Prepare a baking pan with baking spray and preheat the oven to 350°F.
Pour the batter into the prepared baking pan and bake for approximately 19 minutes or until a toothpick comes out clean.
