Remove both ends of the onion (the root and the tip) and slice it in half, then peel the skin off.

In a bowl, combine 100ml of low sodium soy sauce, 40ml of rice vinegar, 70g of brown sugar, 15ml of toasted sesame oil, and 1.5g of crushed chili flakes. Whisk together and set aside.

In a saucepan, add 300g of washed jasmine rice and 500ml of cold water, then salt to taste. Bring to a boil, reduce heat to low, cover, and cook for 12 minutes undisturbed. Leave covered for an additional 6 minutes after turning off the heat, then fluff with a fork.

In a large pan or wok over high heat, add 30ml of peanut oil and heat until hot.

Add 1kg of beef mince to the pan, spreading it evenly and breaking it up. Cook for about 3 minutes until golden brown, then season with sea salt flakes and ground white pepper.

After 3 minutes, mix the beef and cook for another 3 minutes until browned all over. Adjust cooking time if using higher fat beef.

Add the sliced onion to the beef and cook together for about 2 minutes to allow the onion to soften and release moisture.

Add the grated carrot, broccolini, red bell pepper, sea salt flakes, ground white pepper, and the white parts of the spring onion to the pan. Mix and cook for about 2 minutes until vegetables are slightly softened.

Pour the prepared sauce into the pan, scraping it all in. Cook for about 3 minutes, stirring occasionally, until the sauce reduces slightly. If it gets too dry, add a splash of chicken or vegetable stock.

Optionally, add sesame seeds and mix through before removing from heat. Adjust seasoning if necessary.
