Soak 120 g of dangmyeon noodles in warm water for about 30 minutes.

Slice half an onion, cut 50 g of carrot into thin matchsticks, and cut 50 g of bell peppers into long strips.

Thinly slice 2 shiitake mushrooms and cut 50 g of garlic chives into long strips.

In a small container, mix 1.5 tbsp of soy sauce, 1 tbsp of oyster sauce, 1 tbsp of sugar, a pinch of MSG (optional), and 1/3 cup of water.

In a pan, heat 2 tbsp of oil over medium-high heat, then add the pork with some salt and pepper, cooking for about 1-2 minutes until no longer pink.

Reduce heat to medium and add 1 tbsp of minced garlic, onion, carrot, and mushrooms, stir-frying for about 3 minutes until softened.

Add the soaked dangmyeon noodles and the prepared sauce to the pan, stir-frying for about 3 minutes until well combined and most of the liquid has evaporated.

Reduce heat to low and add the bell peppers and garlic chives, tossing together for about 1 minute, or add spinach if using instead of chives.

Turn off the heat and finish with 1 tbsp of toasted sesame oil and a generous amount of toasted sesame seeds.

Serve on a plate, garnishing with extra veggies on top if desired.
