Servings4
5 pounds pork shoulder
1 cup sour orange juice
6 cloves garlic (minced)
1 cup olive oil
1/2 tsp oregano
1/2 tsp cumin
1 tsp salt
1 tsp black pepper
1 small white onion (chopped)

sour orange juice

🥗Healthier: fresh orange juice + lime juice

💰Cheaper: orange juice

Fresh citrus provides acidity and flavor, while orange juice is more accessible.

pork shoulder

🥗Healthier: pork loin

💰Cheaper: chicken thighs

Pork loin is leaner, and chicken thighs offer a budget-friendly alternative.

olive oil

🥗Healthier: avocado oil

💰Cheaper: vegetable oil

Avocado oil has a high smoke point and is healthier, while vegetable oil is more economical.

bay leaves

💰Cheaper: dried bay leaves

Dried bay leaves are more accessible and cost-effective.

1

Add garlic and olive oil to a bowl and whisk well.

2

Add cumin, oregano, salt, and pepper and continue whisking.

3

Add sour orange juice and whisk more.

4

Stir in onions.

5

Add to a sealed jar and shake well.

6

Make small slits throughout the pork. Not too deep – just to allow marinade to penetrate meat.

7

Add pork to a large sealable plastic bag. Pour marinade on top. Remove as much air as possible and close bag.

8

Refrigerate for 8-10 hours or overnight.

9

Remove pork from bag and place in a roasting pan, fat side up.

10

Pour marinade over pork and roast for 5 hours or so, basting regularly.

11

Cook until pork is fork tender. Remove from oven and let rest for 10 minutes before slicing or shredding.
