Start by preparing the corn husks for wrapping the humitas by carefully peeling them off the cob.
Grind the corn kernels using a corn mill until finely ground.
Prepare a refrito by sautéing chopped white onion in lard until soft, then let it cool.
Combine the ground corn with the refrito, adding 1 kilogram of corn, 4 cups of milk, and 250 grams of cheese.
Add 40 grams of sugar and 12 grams of salt to the mixture, adjusting for sweetness if desired.
In a separate bowl, beat 2 egg whites until stiff peaks form and fold them into the corn mixture for aeration.
Add a pinch of nutmeg for flavor.
Prepare a steamer with water and place the corn husks inside to prevent the humitas from getting wet.
Fill each corn husk with the corn mixture, fold, and tie securely.
Steam the wrapped humitas for about 30-40 minutes until firm.
Let cool slightly before serving.
