Harvest the choclos from the field, selecting the best ones and removing the husks.
Choose large, intact banana leaves for wrapping the humitas.
Remove the kernels from the choclo using a knife, ensuring to keep them tender.
Blend the corn kernels with some of the corn broth until the mixture is coarsely ground.
Add sautéed onion and a mixture of seasonings to the corn mixture, blending until combined.
Melt approximately 1 pound of butter and add it to the corn mixture.
Incorporate 6 eggs into the mixture, ensuring they are well beaten.
Add about half a pound of sugar to the mixture, mixing thoroughly until the texture is fluffy.
Add a pinch of salt to enhance the sweetness of the humitas.
Using the banana leaves, place two tablespoons of the corn mixture and create a small indentation to add cheese.
Wrap the mixture in the banana leaves, ensuring they are secure and intact.
Place the wrapped humitas in a tamalera (steamer), stacking them in two layers if necessary.
Cover the tamalera and steam the humitas until cooked through, checking for doneness visually.
Remove the humitas from the steamer and let them cool slightly before serving.
