2 tablespoons Walker's Wood Caribbean one-stop sauce
1 large onion
4 cloves garlic
2 scallions
2 pimento peppers
1 inch ginger
1 bell pepper
1 cup puree pumpkin
4 cups beef broth
2 cups water
1 teaspoon salt
2 beef bouillon cubes
1 lb yellow yam
2 medium potatoes
2 carrots
1 christophine
1 cup corn

Season oxtail with green seasoning, garlic powder, onion powder, chicken bouillon, black pepper, dried thyme, paprika, poultry seasoning, and soy sauce. Add about a tablespoon of Caribbean one-stop sauce. Mix everything together.

Allow the oxtail to marinate overnight or for at least 2-3 hours.

The next day, remove the oxtail from the marinade and place it on a plate.

In a large pot, sauté chopped onion and garlic for about 2 minutes.

Add scallion, thyme, pimento peppers, and ginger to the pot; sauté briefly.

Add bell peppers and puree pumpkin (boiled and blended) to the pot.

Add the marinated oxtail and the beef broth from the marinade to the pot. Mix well.

Cover the pot and allow it to boil, gradually adding water as needed. Do not add carrots or potatoes yet; focus on tenderizing the oxtail.

After about 1 hour and 45 minutes of boiling, add salt, pepper, beef bouillon cubes, pimento peppers, thyme, garlic, and bay leaf. Add a little more water as needed.

Add yellow yam, potato, carrot, and christophine to the pot. Cover and continue to cook.

Add corn to the pot. Initially planned to add dumplings but decided against it. Dumplings can be added if desired.

Cover the pot and allow to boil for about 15-20 minutes until everything is cooked through.
