Preheat the oven to 200 degrees Celsius.
Place oxtail and chopped onions in a dish and roast in the oven for about 30 minutes until caramelized.
Chop up celery, carrots, and leeks and add them to a bowl.
Pour a tin of chopped tomatoes and homemade beef stock into the casserole with the oxtail and onions.
Add a little bit of thyme to the casserole.
Cover the casserole and cook in the oven for a few hours.
Prepare bangers and mash by cooking sausages in the oven and boiling potatoes.
Heat local milk and melt butter in it, then add salt and pepper for the mashed potatoes.
Slice two large onions and sauté them in butter for about 30 minutes until caramelized.
Add honey and balsamic vinegar to the caramelized onions and let it slow cook for another 10-15 minutes.
Mash the boiled potatoes until smooth, incorporating the heated milk and butter mixture.
