Honey adds moisture and flavor.
Begin by mixing strong white bread flour, sugar, yeast, and warm full fat milk in a bowl.
Add unsalted butter and a touch of baking powder to the mixture.
Transfer the dough to a stand mixer with a dough hook attachment and mix on medium-high speed for around 10 minutes until the dough has structure and elasticity.
Cover the dough with cling film and allow it to rise in a warm place for around 60 to 90 minutes.
Punch down the risen dough and roll it out to about 2 centimeters thick.
Use a floured cutter to stamp out the doughnuts and place them onto a flat baking tray lined with parchment paper.
Let the doughnuts proof uncovered for around 30 minutes, leaving space around each one.
Carefully lower the doughnuts into hot oil, removing the baking parchment once they slide off.
Fry the doughnuts for around 4 to 5 minutes total, about 2 to 2.5 minutes per side, until golden brown.
Let the fried doughnuts cool for around 5 to 10 minutes before preparing the sugar coating.
Mix caster sugar with ground cardamom for the sugar coating.
Coat each slightly warm doughnut in the sugar mixture until well covered.
To fill the doughnuts, make a small hole in the center using a chopstick or the back of a spoon, going about halfway through.
Pipe strawberry jam into the center of each doughnut, ensuring the jam is not too hot.
