Heat 1/2 cup milk to about 110-115°F.

Add 1 teaspoon of sugar and 2 tablespoons of dry active yeast to the milk and stir.

In a standing mixer with a paddle attachment, add 2 1/2 cups of flour, 1 teaspoon of salt, 1/4 cup of white sugar, 1/4 cup of brown sugar, and 2 tablespoons of butter.

Add the foaming yeast mixture and 2 beaten eggs to the dry ingredients.

Mix on low speed until combined, then scrape down the sides of the bowl.

Switch to a dough hook and knead the dough on medium speed for about 7-8 minutes until smooth and slightly sticky.

Transfer the dough to a large bowl coated with about 2 teaspoons of oil, cover with plastic wrap, and let it rise in a warm place for about 90 minutes until doubled in size.

Flour a silicone mat and transfer the dough onto it, sprinkling flour on top.
