๐Ÿฅ—Healthier: jalapeรฑo

๐Ÿ’ฐCheaper: habanero

Jalapeรฑo offers heat with less intensity, while habanero is a more accessible substitute.

curry powder

๐Ÿฅ—Healthier: homemade curry blend

๐Ÿ’ฐCheaper: turmeric + cumin

Homemade blends can be healthier and more flavorful.

chicken

๐Ÿฅ—Healthier: tofu

๐Ÿ’ฐCheaper: chicken thighs

Tofu is a plant-based option, while thighs are more economical than breasts.

Vegetable broth is lower in calories, and water with seasoning is cost-effective.

1

Prepare the ingredients: gather sofrito, fresh thyme, red bell pepper, adobo, ground ginger, turmeric powder, garlic powder, onion powder, black pepper, curry powder, chicken, scotch bonnet hot pepper sauce, and chicken bouillon.

2

Season the chicken with adobo, half a package of chicken bouillon, ground ginger, black pepper, and garlic powder. Mix well to coat the chicken evenly.

3

Heat a little oil and water in a pot over medium-low heat. Remove the skin from the chicken and add it to the pot.

4

Cover the pot and let the chicken cook for 20 minutes, stirring occasionally.

5

After 20 minutes, check the chicken; it should have a rich color and be cooked down. Stir the chicken to ensure even cooking.

6

Add green onions, red bell pepper, and fresh thyme to the chicken. Use about 4-5 sprigs of thyme.

7

Add sofrito, the remaining half package of chicken bouillon, additional curry powder, and scotch bonnet hot pepper sauce. Adjust seasoning as necessary, adding a little at a time.

8

Cover the pot again and let the chicken continue to cook.

9

Prepare the dumpling mixture: combine 1/2 cup all-purpose flour, 1/4 cup white cornmeal, and 1/2 teaspoon garlic powder in a bowl.

10

Gradually add hot water and a little oil to the flour mixture until it forms a dough that pulls away from the bowl. Let it rest for a few minutes.

11

Shape the dough into small dumplings and add them to the chicken pot, ensuring they are submerged in the gravy.

12

Cook the dumplings in the chicken gravy for about 10 minutes until they are done. Taste the broth and adjust seasoning if needed, adding more chicken bouillon or black pepper if necessary.

13

Add more scotch bonnet hot pepper sauce if you prefer a spicier curry. Cover and let it simmer until the dish is ready.
