1

Wash the green chilies thoroughly and make a slit in the center, keeping the stem intact.

2

Add 1 teaspoon salt and 1/2 teaspoon turmeric powder to the chilies and mix well.

3

Let the chilies sit for about 10 minutes to absorb the salt and turmeric.

4

In a pan, dry roast 1 tablespoon whole coriander, 1 tablespoon fennel seeds, and 1 teaspoon cumin seeds on low flame until fragrant, stirring continuously to prevent burning.

5

Crush the roasted spices coarsely without turning them into a fine powder.

6

Add 1/4 teaspoon kalonji (nigella seeds) to the crushed spices and mix well.

7

Heat oil in a pan and add the marinated chilies once the oil is hot.

8

Fry the chilies until they develop white spots and change color slightly.

9

Add half of the prepared spice mixture to the pan and mix well with the chilies.

10

Add tamarind pulp (strained) to the pan and mix thoroughly. If tamarind is unavailable, lemon juice can be used instead.

11

Add Kashmiri red chili powder for color and mix well.

12

Add 1/2 cup whisked yogurt to the pan after turning off the flame, then turn the flame back on to medium heat.

13

Cook until the yogurt thickens and the flavors meld together, about 5 minutes.

14

Add the remaining spice mixture and a little black salt to taste, mixing well.

15

Cover and let it cook for another 5 minutes before serving.
