Preheat the oven to 350°F (175°C).
Crack 2 whole eggs into a bowl.
Add 1 cup of sugar to the eggs.
Pour in 1 cup of vegetable oil.
Mix the ingredients using a whisk.
Add 1 tablespoon of baking powder to the mixture.
Add vanilla sugar or vanilla extract to the mixture.
Gradually add 2.5 cups of flour, mixing well.
Use your hands to gather the flour from the bottom of the bowl and mix until combined.
Oil your hands to prevent sticking and form the dough into small balls.
Place the dough balls on a cookie sheet, leaving space between them.
Flatten the balls slightly and create a design if desired.
Bake for 10-12 minutes at 350°F (175°C).
Once baked, scoop out the center of the cookies while still warm.
Fill the scooped cookies with blackberry jam and press them together to glue them.
Optionally, roll the filled cookies in crushed cookie crumbs.
