½ tbsp of baking soda
2 tsp of baking powder

butter

🥗Healthier: coconut oil

💰Cheaper: margarine

Coconut oil is dairy-free and adds a unique flavor.

dulce de leche

🥗Healthier: caramel sauce

💰Cheaper: sweetened condensed milk

Caramel sauce is easier to find and can mimic the sweetness.

1

Mix all dry ingredients (corn flour, flour, baking soda, baking powder).

2

In a separate bowl, mix together butter, sugar, and egg yolks (mixing in one egg yolk at a time).

3

Then mix in cognac and vanilla.

4

Pour dry ingredients into wet ingredients and mix thoroughly.

5

The consistency of the dough should be soft and oily. Collect the dough into a ball, wrap in plastic, and place in the fridge for about half an hour to an hour.

6

After chilling, roll out onto a floured surface and cut into circular shapes with a cookie cutter.

7

Bake in the oven for 10 minutes at 150 degrees Celsius until lightly brown on the bottom.

8

Let cookies cool completely before filling with dulce de leche or quince jam.

9

After spreading on the cookie, find a similar size cookie to place on top and roll the cookie in coconut shavings.

10

Let cookies sit for a couple of hours to become softer.
