200g all purpose flour
½ tsp baking soda
2 tsp baking powder
200g icing sugar
220g butter
3 large egg yolks
1 tsp vanilla extract
zest of 1 lemon
2 jars of bakery Dulce De Leche spread

Sift together corn starch, flour, baking soda, and baking powder.

In a large mixing bowl, add softened butter and icing sugar. Mix until creamy and pale yellow.

Add egg yolks one by one, ensuring each is fully mixed in before adding the next.

Add 1 cup of sifted dry ingredients and mix.

Add the rest of the dry ingredients and quickly knead the dough until an even texture is reached. Do not over mix.

Wrap the dough in plastic wrap and refrigerate for 20-30 minutes.

Remove and roll out to ¼ inch thick.

Cut out round cookies 1½ inches in diameter.

Place them carefully onto a baking tray lined with parchment paper.

Bake at 350°F (175°C) for 10-12 minutes. Cookies should not brown.
