In a large bowl, combine 1 3/4 cups mozzarella and 2 tablespoons cream cheese.
Microwave the mixture for about 2 minutes until very hot.
While the cheese is heating, prepare 1 egg and 3/4 cup almond flour, and get your fillings ready.
For the cinnamon filling, combine 2 tablespoons of butter, 1 tablespoon of cinnamon, and sweetener (Swerve) in a bowl.
For the cream cheese filling, mix 8 ounces of cream cheese, 1 egg yolk, and 1/4 cup sweetener until smooth.
Prepare a baking pan lined with parchment paper.
Once the cheese mixture is hot, add the egg and stir until well incorporated.
Add 3/4 cup almond flour to the cheese mixture and mix with your hands to form a dough.
Shape the dough into a large oval on the parchment paper.
Spread the cream cheese filling evenly over the dough.
Melt 2 tablespoons of butter and mix with the cinnamon filling ingredients, then brush this mixture over the dough.
Pipe the cinnamon filling down the middle of the dough.
