2 tablespoons Flaxseed meal
2/3 cups shredded sweetened coconut
1 cup rolled Oats
1/4 teaspoon pumpkin pie spice or ginger spice
2 teaspoon Cinnamon
1/2 cup Soft pitted dates (deglet or medjool)
1/4 cup Peanut butter or almond butter
1 teaspoon Vanilla
1/2 tablespoon Maple syrup - optional

Place the peeled, chopped carrots in the bowl of a food processor with the S blade attachment. Blend until tiny pieces of carrots are formed. Set aside in a bowl.

In the food processor bowl again (no need to clean it), add all the dry ingredients and blend on high speed for 1 minute until finely ground.

Add in the peanut butter, vanilla, maple syrup (optional), the carrot pieces from step 1, and the soft pitted dates. If your dates are slightly dry, soak them in hot water for 10 minutes before using. Drain well before adding to the food processor.

Blend on high speed again until a sticky dough is formed.

Scoop out dough and roll between your hands to form golf-sized balls.

Roll each ball into shredded sweetened coconut.

Place each ball on a plate covered with parchment paper.

Store in an airtight container in the fridge for up to 1 week or freeze and defrost 1-2 hours in the refrigerator before eating.
