1

Dust the bone-in chicken thighs in flour mixed with paprika, ensuring a good rub around.

2

Add a bit more salt on top of the chicken thighs and more flour to help protect the chicken and thicken the sauce.

3

Thinly slice a couple of white onions for the dish.

4

Blanch tomatoes for 10 seconds in boiling water, then transfer to ice water to peel, cut them into quarters, and remove the center.

5

Peel the bell peppers using a barbecue or gas hob to char the skin, then julienne them after removing the seeds and core.

6

Slice the red chili into julienne pieces.

7

Heat the pan with the chicken until crispy, then flip to seal the other side.

8

Chop garlic and smash it with salt to create a paste, then add it to the onions in the pan.

9

Add the sliced onions to the pan, allowing them to lift the sediment from the bottom.

10

Add a teaspoon of smoked paprika to the onions and garlic, stirring to combine.

11

Add the charred and peeled bell peppers to the pan with the onions and garlic.
