Rinse the red berries under cold water and remove any stems or leaves.
Combine the berries, sugar, and water in a saucepan over medium heat.

In a separate bowl, mix the potato starch with a little cold water to create a slurry.
Add the slurry to the berry mixture, stirring constantly until it thickens, about 2-3 minutes.
Remove the saucepan from heat and stir in the vanilla extract, lemon juice, and a pinch of salt.
Allow the mixture to cool slightly before transferring it to a serving dish.
Refrigerate the dessert until fully chilled, at least 2 hours.
Serve the chilled dessert with a drizzle of cream on top.
