Yogurt Bread

3 cups self-rising flour (375 g)
1 and 3/4 cups low-fat vanilla yogurt (318 g)

Preheat the oven to 375°F.

In a mixing bowl, add 3 cups of self-rising flour.

Add 1 and 3/4 cups of low-fat vanilla yogurt to the flour.

Mix the flour and yogurt using a Danish dough whisk until there are no clumps of flour left, about 1 minute.

Ensure the dough is wet and sticky, resembling drop biscuit dough, and do not overwork it.

Grease an 8 and 1/2 by 4 and 1/2 cast iron loaf pan with 1 tablespoon of oil, using a paper towel to spread it around.

Turn the dough out into the greased loaf pan and smooth it out to fill the pan evenly.

Place the loaf pan in the preheated oven and bake for 35 to 40 minutes at 375°F.

After baking, turn the bread out of the loaf pan immediately to prevent sogginess.

Let the bread cool slightly before slicing, though it can be cut while still warm.
