Heat 2/3 cup of milk to warm, around 100°F.
Add 2 tablespoons of butter to the warm milk.
Mix in 2 tablespoons of sugar and 1 tablespoon of yeast, then let it sit for about 5 minutes.
In a large bowl, add 2 1/2 cups of all-purpose flour and 1 teaspoon of salt.
Dump in the yeast mixture and add 1 egg.
Stir with a spatula for 20 big stirs, then switch to a spatula to incorporate everything more thoroughly.
If using a mixer, put everything in the mixing bowl and mix on low for 1 minute.
Knead the dough for approximately 5 to 8 minutes by hand, adding flour as needed if sticky.
Place the kneaded dough in a lightly oiled dish and cover it. Let it rest for 1 hour until doubled in size.
For the filling, blend 10 ounces of walnuts, 4 tablespoons of sugar, 1 teaspoon of cinnamon, 4 tablespoons of milk, 1 egg, and 1/2 teaspoon of vanilla until fine.
Roll out the dough into a rectangle on a floured surface.
Brush melted butter onto the rolled-out dough.
Spread the walnut filling evenly over the dough.
Roll the dough tightly from one end to the other to form a log.
Shape the log into an S shape and place it in a greased loaf pan.
Spritz the dough lightly to prevent drying out and cover it. Place it in the oven (turned off) to rise.
Preheat the oven to 350°F.
Prepare an egg wash by scrambling 1 egg with 1 tablespoon of water and brush it over the top of the dough.
Bake for 15 minutes at 350°F, then reduce the temperature to 300°F and bake for another 45 minutes.
Let the bread rest for 30 minutes before serving.
Optionally, make icing with powdered sugar and water to drizzle over the top.
