In a bowl, add sweet tapioca starch and salt to taste, and mix well.

Add 1 egg and butter in cubes to the bowl.

Pour a little milk with a spoon and mix until it turns into crumbs.

Add more milk and continue mixing until the dough starts to get firmer.

Mix the dough very well with your hands until it no longer sticks to your hands.

Add the mozzarella cheese and mix everything until it becomes a homogeneous dough.

Cover the dough with cling film and refrigerate for 15 minutes.

Cover the baking dish with parchment paper and turn on the oven to 410ºF.

After 15 minutes, remove the dough from the fridge and cut it into pieces.

Make balls and roll them into the shape of a cylinder, pressing the ends together to form a doughnut.

Alternatively, make a cylinder and form a horseshoe shape.

Place them in the baking dish and brush with melted butter or oil if desired.

Bake in the oven for about 20 minutes or until golden brown.

For the second batch, prepare them for freezing by placing them on a smooth surface, covering with cling film, and freezing for about 1 hour before transferring to a plastic bag.
