Put the flour, salt, and butter in a bowl and mix well with a spatula.
If the dough is coarse and lumpy, add the cold water.
Place the dough on parchment paper and shape it into a rectangle about 15 x 20 cm in size and roll with a rolling pin.
Let the dough rest in the fridge for about 1 hour.
Take the dough out of the fridge and roll it out with a little flour into a small rectangle.
Fold the dough over, wrap in cling film, and chill in the fridge for about 30 minutes or in the freezer for 15 minutes.
Take the dough out of the fridge or freezer and dust with a little flour, roll out and fold again.
Repeat the process about 2 to 3 times and wrap with cling film and chill in the fridge for about 30 minutes or in the freezer for 15 minutes.
While waiting, prepare the almond filling by mixing together sugar and butter.
Add the egg to the mixture.
Add the ground almonds to the mixture.
Add flour to the mixture.
Take the dough out of the fridge and roll it out evenly on a lightly floured work surface to about 3-5 mm thick.
Cut out 9 circles with a diameter of about 6.5 cm from the dough.
Use a smaller cutter with a diameter of 4 cm to cut out another circle in the middle of the remaining circles to create rings.
Place the large circles (without a hole) on a baking sheet lined with baking paper.
Brush the edges of the circles with the beaten egg.
Place a strip of dough ring on the edge and brush with the beaten egg.
Repeat the process until 3 dough rings are layered on top of each other.
Brush the whole side evenly with the beaten egg.
Put the almond filling in the middle of the dough.
Sprinkle with almond flakes.
Bake in a preheated oven at 160°C (circulating air) for about 20 minutes until golden brown.
