Metemgee

2 onions finely chopped
4 heads of green onions finely chopped

1 handful of salted cod fish (optional)
Few pieces of grey snapper

In a wide pot, add 1 tsp coconut oil.

Add chopped onions and pepper and cook for 2 minutes.

Peel and wash all provisions (plantains, eddoes and sweet potatoes).

Add all provisions to the pot and mix well.

Add salt and black pepper and mix.

Add thyme.

Add coconut milk and green onions.

Cover and cook on medium heat.

Wash and season fish with green seasoning (garlic, green onions, thyme and pepper).

Add 1/2 tsp salt and 1/2 tsp black pepper to the fish.

Slightly dust the fish in flour.

In a pan with hot oil, add the fish and cook until golden brown on all sides.

Drain and set aside to add to the dish.

In a bowl, combine 3/4 cup of flour, 1/4 tsp baking powder, 1 tbsp brown sugar, and 2 tsp butter.

Mix well and add room temperature water to knead to a firm dough.

Make small pieces and roll to 2 inches long.

Add to the pot of Metem and cook for 5 minutes.

Add fried fish on top and serve.
