Preheat the oven to 350°F (175°C).

Chop 1 cup of pecans using a knife or meat tenderizer, or run them through a food processor. Set aside in a bowl.

In a large bowl, combine the chopped pecans, 1 cup of thin sliced almonds, and 1 cup of coconut flakes. Mix loosely and set aside.

In a medium-sized bowl, add 1 large egg and 3 tablespoons of stevia mix. Mix together and set aside.

In another bowl, combine 2 tablespoons of sugar-free peanut butter and 1 tablespoon of coconut oil. Microwave for about 20 seconds to melt if necessary.

Mix the melted peanut butter and coconut oil into the egg and stevia mixture, ensuring it’s not hot enough to cook the eggs.

Add in sugar-free chocolate chips (optional) and 3/4 teaspoon of salt to the mixture. Stir to coat everything evenly.

Use a silicone granola bar mold or another suitable pan to fill with the mixture, pressing down with a spoon or spatula to compact it.

Bake in the oven for 18 to 20 minutes until the tops are golden brown.

Allow to cool completely in the pan before removing. If using a 13x9 or 9x9 pan, let it cool completely before removing the bars.

Once cooled, squeeze the bars apart and push up from the bottom to remove them from the mold.
