This elegant dessert features poached peaches, raspberry sauce, and whipped cream, symbolizing the opulence of the era. Today, it remains a popular summer treat, celebrated for its refreshing flavors and beautiful presentation.

Make the sweet short crust pastry by combining 200 g plain flour and a pinch of salt in a bowl.
Rub in 50 g butter and 50 g lard until the mixture resembles fine breadcrumbs.
Add 30 g icing sugar and mix well.
Incorporate 1 egg to bring the pastry together, adding cold water if necessary.
Chill the pastry in the fridge for at least 30 minutes.
Roll out the chilled pastry and fit it into a 9-inch tart tin.
Prick the bottom of the pastry case and line with greaseproof paper and baking rice.
Bake in the oven at 170°C for 20 minutes, then check for browning.
Apply an egg wash to the bottom and return to the oven for another 10 minutes until crisp.
Allow the pastry case to cool before adding the filling.
Spread 100 g raspberry jam over the bottom of the pastry case.
Arrange sliced peaches from 1 tin on top of the jam.
