16 oz Glace Cherries (Candied Cherries)
8 oz raisins
6-8 oz dried pineapple (or candied pineapple)
6 oz crystallized Ginger (Ginger preserves)
10 oz Candied Peel (finely chopped)
6 oz sweet Orange Marmalade
6 oz Strawberry Jam (or any desired flavor)
14 oz very fine Semolina
6 oz white Sugar
3-4 oz Maple Syrup (or Golden Syrup)
1 tablespoon Bees Honey
8 oz butter (melted)
8 large eggs (whites and yolks)
2 teaspoons ground Nutmeg
1 tablespoon ground Cinnamon
3 tablespoons Almond Extract
2 oz Rose Water

Into a bowl add all the ingredients except sugar, eggs, butter and semolina. Mix well.

Beat the eggs and sugar until sugar is dissolved.

Melt the butter.

Mix the melted butter into the cake mixture.

Add the egg & sugar mixture into the cake mixture. Mix very well.

Line the cake pan with 2 sheets of thick brown paper. Place two sheets of foil on top of the brown paper.

Pour the cake mixture into the prepared cake pan and spread evenly.

Bake in preheated oven at 300F until done. Do toothpick test to confirm.
