Boil the potatoes in salted water until tender.

Blend the diced beets with half of a medium onion, a small clove of garlic, mustard, salt, and vinegar until smooth.
Once the potatoes and vegetables are cooked and cooled, mix them in a bowl with 3/4 cup of mayonnaise and the blended beet mixture.
Season with black pepper and mix gently with gloved hands to avoid mashing the potatoes.
