Grilled Swordfish

4 servings
Servings4
1.5 cups basil leaves
0.5 cups extra virgin olive oil
3 tablespoons fresh lemon juice
3 tablespoons dijon mustard
3 cloves crushed fresh garlic
swordfish steak (1.5 inches thick)
white onion
lemons
1

Make the marinade by whisking together 0.5 cups of extra virgin olive oil, 3 tablespoons of fresh lemon juice, 3 tablespoons of dijon mustard, and 3 cloves of crushed fresh garlic until smooth and evenly colored.

2

Ball up 1.5 cups of basil leaves in your hand, roll them up zigzag style, and chop them up.

3

Add the chopped basil to the marinade and stir evenly.

4

Place the swordfish steak into a ziploc bag and pour the marinade over it, ensuring it is covered evenly. Let it marinate for 3 hours, but do not exceed that time to avoid the lemon juice cooking the fish.

5

Preheat the grill and prepare lemons by cutting them in half for grilling face down.

6

Slice the white onion into discs and rings to create a base for the fish on the grill, which will add flavor and prevent sticking.

7

Place the marinated swordfish on the grill over the onion slices to cook.

8

Grill the fish just enough to get grill marks, ensuring it does not stick to the grill.

9

Once cooked, squeeze additional lemon juice over the fish and garnish with fresh basil leaves before serving.
