Grilled Swordfish

Grab a mixing bowl and add olive oil and lemon juice.
Add red wine vinegar, sliced shallots, minced garlic, roasted red peppers, chopped capers, and fresh dill to the bowl.
Season the mixture with salt, pepper, and garlic seasoning, then mix well.
Let the salsa hang out in the fridge while cooking the swordfish.
Coat the swordfish steaks with olive oil to help the seasoning stick.
Season the swordfish with salt, pepper, and garlic seasoning.
Let the swordfish sit on the cutting board while the grill heats up.
Heat the grill on medium-high heat and spray the grates with cooking oil.
Place the swordfish steaks on the grill grates and press them down.
Cook the swordfish for about 2-3 minutes per side until it reaches an internal temperature of 143°F.
Remove the swordfish from the grill; the carryover will bring it to 145°F.
Top the grilled swordfish with the Mediterranean salsa.
