Cut rusted potatoes into cubes.

Boil water and add the cubed potatoes and 1/2 teaspoon of baking soda.

Boil for 1 minute.

Remove from boiling water and let cool for about 30 seconds to create a film on the potatoes.

Add about 1 1/2 teaspoons of salt and a teaspoon and a half of butter to the potatoes and stir.

Preheat a sheet pan in a 500°F oven.

Dump the potato mixture onto the hot sheet pan.

Drizzle a little olive oil over the potatoes.

Bake in the 500°F oven for 30 minutes until golden and crunchy.
