2 tablespoons oil
2 tablespoons butter
1 medium onion, diced
0.5 teaspoon garlic powder
1 teaspoon smoked paprika

Wash the potatoes thoroughly.

If desired, peel the potatoes.

Cut the potatoes into about a half-inch cubes.

Get a pot of boiling water on the stove.

Once the water is boiling, generously season it with salt.

Add the cubed potatoes to the boiling water and let them cook for about 2-3 minutes to soften.

After 2 minutes, strain the potatoes and let them cool for about 5 minutes.

In a pan, melt half of the butter over medium heat.

Once the butter is melted, add the diced onions and cook until translucent, about 1 minute.

Transfer the cooked onions to a separate bowl.

In the same pan, heat the oil and the remaining butter until melted.

Add the cooled potatoes to the pan, spreading them out flat.

Add the cooked onions back into the pan with the potatoes.

Cook the potatoes for about 5 minutes without stirring to build a crust on one side.

After 5 minutes, toss the potatoes gently.

Season the potatoes with salt, black pepper, garlic powder, and smoked paprika, and toss again.

Set the potatoes down flat in the pan and let them cook for another 3-5 minutes to build a crust on the other side.

Once golden brown, remove the potatoes from the pan and plate them.
