Preheat the oven to 425 degrees Fahrenheit.

Take each small purple potato and cut it into four by cutting the potato in half and then cutting that half in half for perfect bite-sized pieces.

Note that purple potatoes can stain your fingers, so keep a paper towel handy.

Drizzle 1 tablespoon of olive oil over the cut potatoes and toss to coat evenly.

Sprinkle chipotle powder on the potatoes to taste; 3 to 4 shakes for a hint of spice, 5 to 6 shakes for medium heat.

Add a generous pinch of smoked salt (or regular salt) and a nice bit of fresh ground black pepper.

Spray a roasting sheet with olive oil spray.

Add the potatoes to the sheet, spreading them apart so they don’t stick together.

Optionally, sprinkle a last pinch of chipotle powder on top of the potatoes.

Place the roasting sheet in the oven for 6 to 7 minutes.

When steam starts pouring out, pull the sheet out and move the potatoes around to prevent sticking.

Put the sheet back in the oven for another 6 to 7 minutes.

Flip the potatoes a couple of times and return to the oven for an additional 45 minutes.
