Heat a large skillet over medium-high heat and add 4.5 tablespoons of canola oil.

Peel and soak 4 medium potatoes in water for 10 minutes, then cut them into quarter-inch pieces, drain, and dry with a kitchen towel.

Add the potatoes to the skillet and cook for about 10 minutes, flipping them halfway through after 5 minutes.

After flipping, let the potatoes cook for an additional 3 to 4 minutes, then reduce the heat to medium.

Season the potatoes with creole seasoning, garlic salt, coarsely ground black pepper, smoked paprika, and chili lime seasoning blend. Mix everything together.

Cook the seasoned potatoes for a couple more minutes.

Add sliced green bell peppers to the skillet and toss with the potatoes, cooking for about 1 minute.

Add 1 sliced onion to the skillet and cook for a couple more minutes, breaking the onion apart while tossing everything together.
