Peel and cut the potatoes into uniform sizes; optional to leave skins on if well scrubbed.

Soak the cut potatoes in water to remove starch and prevent oxidation.

Cut up half an onion and one whole bell pepper; these are optional but recommended.

Heat a 10-inch or larger heavy-bottom skillet over medium heat for a couple of minutes.

Drain the soaked potatoes and add 4 tablespoons of vegetable oil to the hot skillet, enough to cover the bottom.

Let the oil heat for another minute or two before adding the potatoes.

Add the potatoes to the skillet, season with seasoning salt and fresh cracked pepper, and optionally add a pat of butter.

Cook the potatoes for 5 minutes without stirring to allow them to start browning.

After 5 minutes, shake the skillet to move the potatoes around and check for browning.

Add the chopped peppers and onions to the skillet, tossing to coat them in oil.

Cook for another 20 to 25 minutes, tossing every couple of minutes to ensure even cooking.

Stir more often towards the end of cooking to prevent sticking and ensure even browning.

After 25 minutes, check for doneness; they should be nicely browned and steamy.

Scoop the home fries into a serving platter or serve straight from the skillet.
