Heat water to about 110 degrees Fahrenheit.
Add instant yeast and sugar to the warm water; stir and let sit for 5-10 minutes until foamy.
In a mixing bowl, combine all-purpose flour and salt; whisk together.
After the yeast mixture is foamy, add it to the flour mixture along with olive oil; mix until a dough forms.
Lightly flour a surface and knead the dough for about 5-10 minutes until elastic.
Oil a clean mixing bowl and place the dough ball inside; drizzle olive oil over the top and cover with saran wrap.
Let the dough rise in a warm place for about 1 hour until doubled in size.
Punch down the risen dough and cut it into three pieces.
Roll each piece into a ball and then roll it out to about 7 inches in diameter and between 1/8 and 1/4 inch thick.
Place the rolled pita on a tray and bake in a preheated oven at 400 degrees Fahrenheit for about 4-5 minutes until puffed up.
