Bouillon is a cost-effective way to add flavor.

1

Wash oxtails in vinegar and cut off excess fat.

2

Mix dry seasonings in a bowl and sprinkle half over the oxtails.

3

Add Browning sauce, wet jerk spice, and olive oil to the oxtails and mix.

4

Add soy sauce and ketchup to the mixture and stir well.

5

Massage the seasonings into the oxtails and vegetables by hand.

6

Cover with Saran Wrap and marinate in the fridge overnight (or for a shorter time if preferred).

7

Prepare burnt sugar by heating sugar until dark and smoky (optional).

8

Sear the marinated oxtails in a pot until they have a dark, rich color, stirring occasionally and covering to help cook evenly.

9

Add all remaining seasonings and vegetables to the pot.

10

Pour in beef bouillon and water to enhance flavor.

11

Add additional seasonings like granulated garlic, granulated onion, and all-purpose seasoning.

12

Stir in ketchup and brown sugar to balance acidity from tomatoes.

13

Let the mixture simmer for 3-4 hours until the oxtails are tender.

14

Add butter beans and simmer for an additional 15 minutes without thickening the sauce further.

15

Serve with rice and peas, cabbage, and fried plantains.
