Bouillon is a cost-effective way to add flavor.
Pat dry the oxtail with a paper towel to remove excess water so the seasoning sticks better.
Season both sides of the oxtail with black pepper and garlic powder.
Sprinkle a little salt on the oxtail, but limit the amount due to the salt in the broth and gravy mix.
Dust the oxtail with the same seasonings used for the seasoning mix.
Spray the skillet with cooking spray and heat it up without adding oil to render some fat from the oxtail.
Add the oxtail to the skillet and sprinkle a pack of brown gravy mix over them, stirring to coat well.
Add chopped green onions and bell pepper to the skillet with the oxtail as they fry.
Cover the skillet with a lid to help steam the oxtail and let them cook for about 30 minutes.
Once browned, add all the ingredients except for the lima beans and okra into the pot.
Add a large can of petite diced tomatoes to the pot and stir everything together.
